I skipped last week because of the chaos surrounding the Fourth of July holiday and my daughter’s 5th birthday, but after many burgers and chicken fingers that week, I came back to cooking with a vengeance. I don’t typically crave curries and soups in warmer weather, but this curry acts more as a sauce. The chimichurri marinade is a quick and easy way to tenderize the meat and add flavor, and the thai noodle salad will be refreshing while hearty.
