For some reason I was craving southeast Asian profiles this week and actually made something to satiate that craving every night. But I assumed I would be the only one who wanted that flavor profile EVERY night, so I gave you a bit of a break with fat head salad. When you look at the individual ingredients Hope you enjoy!
Why I chose the following meals:
red curry pork: a new flavor profile that you won’t be able to stop eating, but you’ll feel satiated quickly. Leave the ingredients simple for the kids, while you’ll feel like you’re in a different country.
bahn mi style steak + noodles: my favorite combination of ingredients made simple with a marinade and pre-cooked noodles. These cabbage noodles are a delicious, neutral base for the flavorful meat, pickled veggies and herbs. Using the sauce as a marinade and then reducing it means less work/management for you!
fat head salad: this salad hits all the textural and flavorful notes you’re craving. And the ingredients are so good on their own (bell peppers, celery, avocado, bacon, chicken) your kids will also love this meal.
Tips/Modifications:
Use half of the can of curry for the red pork and save it for a meal we will make next week!
The ease of the bahn mi noodles is that the majority of the meal can be made in advance. The steak marinates for about 12 hours and the pickled veggies can be purchased or made days in advance and used on tacos, salads, with eggs, etc.
You’ll have meal overlap with the cabbage, red bell peppers, and pickled onions/veggies, so you should be able to use all of your produce this week with the crossover ingredients.
