These meals all scream summer to me. They are light but flavorful and warm but I could eat them on a hot day and not feel weighed down or grossed out. They could be made for large groups with most of the prep done in advance, and some have overlap with ingredients.

Why I chose the following meals:

  1. steak + shishito salad: better than fajitas with all the perks of the combination of flavors. It feels like you’re eating something indulgent and healthy simultaneously.

  2. crispy tacos: all the crunch without the excessive oil. I love the flavor in the meat, the crunch of the taco, and the acid in the cilantro vinaigrette. I dare you to eat just one.

  3. surfer bowls: everything your body is craving in one delicious bowl. I think my husband could eat this meal every day, and I wouldn’t complain about it. It’s a hearty salad.

Tips/Modifications:

  • Since the surfer bowls and crispy tacos both use the cilantro vinaigrette, I would make the meals in this order this week to break up the flavor profiles and create more diversity throughout the week —> crispy tacos —> steak + shishito salad —> surfer bowls.

  • If you are ok with red meat the whole week, you could make extra steak when you make the shishito salad and use the leftovers the next day in your surfer bowls as the protein.

* Or carne asada, pollo asada, carnitas, meat of your choice, etc.
