Prior to last year, I’m not sure I had ever had chicken piccata. One night we were at a dinner with friends, and no one liked what they had ordered except for the person next to me who had ordered the chicken piccata. She offered me a bite, and, when she had finished her meal, I stole her plate. When we went to the same place for brunch and they were serving it, I immediately just went ahead and filled my plate. My family also adores it, and we tend to be chicken breast averse due to the texture and flavor. It tastes amazing on it’s own, regardless of the sides, and it never tastes dry to me.
I’m always looking for meals I can cook for large groups, and I think this would be a great one. I prepared it two ways (oven and stove) in an effort to make it easier and less messy and to compare it to the traditional preparation. My husband thought the oven method was more tender, but I liked the appearance and sear on the stovetop method (the image below is stovetop, and the 3rd image is oven). Regardless, they both tasted delicious!
