Over the weekend a friend and I were talking about how to serve our kids more protein when they snack. My vanilla yogurt or pimento chicken salad are some of my favorite options, or I often offer them cheese, salami, prosciutto, and hard boiled eggs whenever they say they’re hungry and can’t wait till the next meal. But it got me thinking about high protein dips that kids would also like. My kids won’t eat cottage cheese on it’s own or even with their favorite chip, but I thought I could turn it into something they might find palatable. This dip is delicious and packed with protein from the mozzarella, parmesan, and cottage cheese. It gives pizza lunchables from the 90’s vibes when served cold, but warm it up and you wont believe you’re not eating a slice of the good stuff. Hope you and your kids enjoy as much as we do!
pizza dip
ingredients
1/2 cup cottage cheese
1/4-1/3 cup parmesan
2-3 tablespoons shredded mozzarella
1/3 cup pizza sauce (I used Trader Joes)
1 teaspoon chopped basil
1 teaspoon chopped oregano
pinch of salt
instructions
Combine all the ingredients in a small to medium size bowl. If the texture of the cottage cheese bothers you, you could puree it with a food processor.
When ready to serve, microwave small portions until the cheese is bubbly, or spoon some into an oven safe dish and heat for 5-7 minutes at 350 degrees.
