I love the flavor of a simple, well cooked steak or piece of chicken, but sometimes it’s unrealistic to expect to attain that on a weeknight. Which is why I love marinades. They help tenderize and add flavor in a pinch when you have children pulling at you every second. This is my go to.
edmonds “house” chicken or steak
ingredients
1.5-2 lbs chicken breasts (halved) or steak (such as flank, skirt, tri-tip)
juice of 1 lemon
4 garlic cloves, minced
1/3-1/2 cup extra virgin olive oil
1 tablespoon Maldon salt
2 tablespoons white sugar
1 teaspoon paprika
instructions
Place the ingredients in a gallon size ziplock bag along with your meat and marinate for at least 4 hours. Make sure your meat is sliced the way you plan on preparing it before putting it in the marinade. If you will be cooking the chicken in chunks or the meat in slices, it is best to chop it in advance otherwise it will be messy with the marinade.
It is always best to bring your meat to room temperature before cooking it. Take your meat out 1 hour before cooking.
