I adore dates. They have a depth to their sweetness that I prefer to most other desserts/sweet things and they go great with salt and nuts. Lately I have been snacking on them with macadamia nuts, and I decided to take it one step further and dip them in chocolate. You guys, they’re perfect. At times, it feels like I’m eating cookie dough, and others, a really great candy bar. They are also neat as opposed to the peanut butter date bars I tried to make a little while ago. I’m not giving up on those yet because I’m also addicted to that combination, but if I never master that recipe, these will suffice for the rest of my life.
ingredients:
~10 large medjool dates
~20 macadamia nuts
~ 1 cup chocolate chips (+ more as needed)
Maldon salt
instructions:
Pit the dates and stuff each date with 2 macadamia nuts. Press the date back together so that you cannot see the macadamia nuts.
Melt the chocolate over a double broiler until it is completely melted. Using a skewer, dip each date in the chocolate until it is completely covered. Place on a piece of parchment paper in a sheet pan and sprinkle with a small pinch of salt immediately after removing from the chocolate. Repeat until you are finished with all the dates.
Place in the freezer until the chocolate hardens and store in the refrigerator or at room temperature afterwards.
