copycat chopped vegetable salad

the thing I have to get every time I go to Gulfstream

I married a good one guys. He lets me steal bites of his food when I order a salad. But with THIS salad, we both want it, so we tend to split it with the filet (one of my faves in Newport!) and another entree or app. If you’ve had this salad, you know there is something so incredibly addictive about it. Is it the eggs? The macadamia nuts? The almost imperceptible kale? Whatever it is, I know I love it and want more of it. So I made it!

This salad requires a decent amount of work, but it can and should be done in advance, making it a great salad for when you host. It also uses cabbage and kale instead of other lettuces, meaning it won’t wilt quickly and can even be eaten the next day (I recommend taking out the tomatoes or grapes and adding fresh ones if eating as a leftover). I initially made it with a roasted garlic and lemon dressing, but the recipe still needs tweaking. Luckily, my salad dressing for the Copycat Macho Salad is a powerhouse dressing
